Over the centuries thousands of sausage varieties have been created by butchers and chefs the world over. As far back as 9BC the Greeks had already established sausages as a standard food item.

In the Odyssey, Homer says, "As when a man near a glowing fire turns to and fro a sausage... anxious to have it quickly roast". Sausages became increasingly popular in the Roman Empire. Indeed our modern word is derived from the Latin "salsicius" meaning "prepared by salting".

During the Middle Ages, sausages were an everyday dish and during the reign of Elizabeth I in 1580, a reference speaks of a "pudding called sawsege" the contents of which were "stuffed into skins and sometimes rolled in flour".
